Spot color is a feature in Illustrator that lets you add a specific color to a selected area of the document. You can use spot color to add a pop of color to an image, or to help you distinguish different elements in your design. To use spot color in Illustrator, first select the area of the document where you want to apply the color. Then click on the Spot Color button (the three dots in the toolbar).
